One of my all time favorite comfort food is Broccoli Soup.Do you know a cup of cooked;broccoli;offers as much vitamin C as an orange, and is a good source of beta-carotene.;Broccoli;contains vitamins B1, B2, B3, B6, iron, magnesium, potassium, and zinc too. It also provides fiber and is low in calories. With so many benefits it definitely should become a fav of every household.
We can have it steamed as well but the soup version is my favourite.
✅Cut the broccoli florets and wash it in warm water.
✅Once done pressure cook it for 2 whistles and then let the steam release.Grind the steamed broccoli into a fine paste and keep it aside.
✅In another pan saute finely chopped onion and 2-3 pods of garlic in olive oil or ghee and add the paste to it.
✅Add the left over water from the pressure cooked broccoli to the mixture and let it come to boil.
✅Add salt as per taste and we are good to go.
✅You can add pepper but I think it works best with oregano sprinklers. #ohsoyum
🌷 you can also grate cheese in the soup just before switching off the flame. It gives that warm fuzzy taste to it.
This whole dish takes close to 20mins to prepare and is a complete favorite at my place. Even Samarth loves it and calls it yum yum soup #momwin
