Roasted Bell Pepper and Tomato Soup!
Serves 2-3
Ingredients:
Green Capsicum or Red Capsicum- 2
Ripe Tomatoes -3
Tomato puree-1tbsp
Garlic finely chopped -2tbsp
Onion finely chopped -1 med size
Red chilli pwd-1tsp
Pepper pwd-1/2tsp
Cumin pwd-1tsp
Butter-1-2tbsp
Salt to taste
Water
Coriander leaves for garnish
Method:
1. Roast the capsicum over the stove till it forms a black skin. Afterward remove from stove and the skin cut in big pieces.
2. Blanch tomatoes in boiling water and once cooled make a puree along with roasted capsicum pieces.
3. In a deep vessel add butter, add garlic fry a bit add onions and fry till transparent. Add store bought tomato puree. And mix well.
4. Add the capsicum tomato puree and mix well. Let it cook for few mins. If you need add a little butter.
5. Add water according to needed consistency. Mix well.
6. Add the powders and mix.
7. Let it boil for few mins, taste and add salt.
8. Add chopped coriander leaves mix well. Remove from stove.
9. Serve with toasted brown bread or garlic bread.
