This is a good salad recipe full of iron and vitamin C, vitamin C is important for better absorption of iron.
1/2 bunch of baby spinach leaves or u can chop large leaves and remove the veins from the spinach.
1 orange - peeled and seeds removed
handful of walnuts coarsely chopped
couple of pieces of strawberries
2 tbsp raspberry or strawberry jam
1 tbsp apple cider vinegar
3 tbsp extra virgin olive oil
salt and pepper as per taste.
mix all ingredients of vinaigrette in a glass bottle, close lid and shake well.
mix spinach, orange, strawberries and put them in a large bowl, drizzle the prepared vinaigrette and garnish with chopped walnuts.
