Ingredients (for 4 servings)
1/2 cup oats (dry roasted)
1/2 cup sooji or semolina
1 cup chopped veggies (capsicum, carrots, peas, beans etc)
1 chopped onion
1 tbsp oil
For tadka (1 tsp mustard seeds, 1 tsp urad and chana daal each, Curry leaves, green chillies, a pinch of hing, few cashews)
1 tbsp lemon juice (optional)
Water for cooking
1. Heat about 2 cups water in a pan and add 1 cup chopped veggies, except onion to boil on simmer for around 5-7 minutes.
2. In another kadai, add 1 tbsp oil and heat it. Prepare the tadka by adding hing, mustard seeds, Curry leaves, green chillies, both daals and cashews and let the daal and cashews get some color.
3. To the tadka add sooji first and roast it for 5-6 minutes till it gives good smell. Now add dry roasted oats and mix everything well.
4. Put the kadai on simmer and add the hot water with veggies. Cook while stirring till upma consistency is reached.
You can add lemon juice. A very healthy breakfast is ready. It can be given in tiffin to kids too!!
Serving suggestion: keep the upma consistency a bit loose as oats are there, else it will be hard when cooled down.
