Mughlai mutton
Ingredients
Mutton 500grm
Onions 2
Tomatoes 2
Ginger garlic paste 1tbsp
Yogurt 4tbsp
Green chilies 4
Turmeric powder 3/4tsp
Red chili powder 2tsp
Cumin powder 1tsp
Coriander powder 2tsp
Garam masala powder 1/2 tsp
Kasoori methi 1tbsp
Fresh cream 2tbsp
Cashew nuts 8
Few strands of saffron
Kewra water 1/2 tsp
Mint leaves chopped 1/4 cup
Coriander leaves
Salt
Ghee 2tbsp
Oil 3-4 tbsp
Whole Spices
Bay leaves 2;
Green cardamom 4
Cardamom 2 big
Cloves 5
1 inch stick of cinnamon
Shahi jeera 1tsp
Method
👉In a pressure cooker add mutton ginger garlic paste, 1/4 tsp turmeric, 1/4 tsp garam masala powder and salt add little water and Cook till mutton done.keep aside.
👉Soak saffron in a 1/4 cup of warm water
👉Heat 2 tbsp of ghee in a pan. Add whole spices onion. Saute till they become soft and then add chopped mint leaves, green chilies and cashew nuts. Fry for 2 min remove from heat and cool.
👉Grind the onion mixture with little of water to a smooth paste and set aside.
👉Heat oil in kadai add chopped tomatoes fry till soft then add red chili powder coriander powder turmeric powder cumin powder garam masala powder and kasoori methi. Fry the masala for few seconds and then add yogurt. Mix well and cook for 2 min.
👉Now add the onion - cashew paste cooked mutton along with the stock. Stir well cover with lid and cook on low flame for 5 min
👉Finally add saffron water kewra water fresh cream and chopped coriander leaves.adjust the salt; if needed. Cover and cook for another 5 min
👉Serve hot with Pulao roti naan or plain rice. Enjoy. ..... #recipes
