Girls this is instant idli . So the following recipe is to make 12 medium sized Idlis.
So all you need to do is to mix 1 small bowl of sooji with same quantity of curd. Add finely chopped carrot, capsicum, tomatoes and peas ( or anything else of your choice) . Add a pinch of salt, pepper and 1 tsp of oil. Add a sache of eno and leave for 5 minutes. Divide the batter in parts to add diff food colours.
Check consistency- it should not be too tight or thin . You may add 1-2 tsp of water to bring it to right consistency.
Now place the batters in idli moulds after greasing them.
Microwave for 7-8 minutes and leave covered for 5 minutes.
Incase you are using pressure cooker then time may be increased to 20-25 Mts and whistle should be removed from the lid.
Your multi colored vegetable Idlis are ready . Enjoy them with tomato ketchup or mint chutney.
I have added colours as my kid loves colourful stuff ( I am sure all toddler moms want to make food attractive), you can skip adding.
P.s.- if you have 2-3 old days sour curd then you may skip adding eno.
