After becoming a mother, I have stopped using refined sugar or maida in any form for baking special treats."

Baked this wholewheat jaggery powder muffins..

All you'd need for baking these delicious treats.
Ingredients.

Wholewheat flour-1 and 1/4 cup

Buttermilk- 1cup

Jaggery powder- 3/4th cup

Vanilla essence-1 tsp

Baking soda- 1 tsp

Oil-1/2cup

Salt pinch

Chocolate chips- 1/2 cup

Coffee powder- 1 tbsp
All you have to do is: .

✅ Sieve the dry ingredients

✅ Mix oil, buttermilk & vanilla essence in a separate bowl.

✅ Preheat oven at 180 degrees

✅ Line the cupcake tray with liners

✅ Mix the dry ingredients to the wet ingredients

TIP: Don't overmix

✅ Use a few Tsps of milk if required

TIP: Batter should be in a ribbon flowing consistency

✅ Fill the cupcakes liner up to 3/4th of the tin

✅ Bake it 180 for 20 mins or till toothpick comes clean
TIP: You can store in air tight container for 3 days or can refrigerate upto a week tray with liners

✅ Mix the dry ingredients to the wet ingredients
