I love cooking restaurant style food at home for my family so that we don't have to wait for weekends or special days to enjoy yummy food. Paneer Makhmali, the recipe which I am sharing today is something which you will prepare again and again!!.kids love it. I am giving a very easy and simple way with no cream and less oil.
Paneer Makhmali
Ingredients (can serve 6-8 people)
15o grams paneer (dip it in warm water half an hour before use, it will be soft)
2 large or 3 medium sized onions (roughly chopped)
3 medium tomatoes (roughly chopped)
5-6 garlic cloves (chopped)
1 chopped green chilli (optional)
1 table spoon grated ginger or instead use 1 table spoon ginger garlic paste
1 cup tomato puree
4-5 table spoons oil
1/4 cup milk
Fresh chopped corriander
Water for cooking
Spices
1 tea spoon sabut zeera, Salt and red chili powder to taste, 1 tea spoon turmeric powder, 1 table spoon coriander powder, 1/2 tea spoon zeera powder, 1/2 tea spoon garam masala, 1 table spoon kitchen king or meat masala.
Khada masala forTadka
1 bay leaf, 5-6 lavangs, 5-6 sabut kaali mirch, 1 badi elaichi, 3-4 choti elaichi
Method
1. In a heavy bottom kadai take half oil i.e. 2-3 table spoons and when hot add sabut zeera till it crackles. Then add onions and saute till golden brown. Add more oil if you want or you can even add little water to cook with less oil. In between sauteing onions, add garlic, grated ginger or ginger garlic paste, chopped green chilli and bhoono the whole mix.
2. Now add tomatoes and little water so that they are soft. While sauteing the masala add turmeric powder, salt and chili powder, dhaniya powder, zeera and garam masala powder and mix well and cook till oil starts separating. Now add half of the kitchen king or meat masala and save rest for later use.
3. Once the masala is ready and a bit cool grind it in a blender.
4. Now take the same kadai that you have used earlier and add 2 table spoons oil. When hot add all khada masala, the mix you have in bender and mix well. Now add milk, rest of kitchen king and coriander leaves. Add little water to gravy and add paneer cut in pieces.
5. Cover with a lid and while stirring in between cook for few minutes till little oil is seen.
The yummy dish is ready to serve. One can add little cream or kaju paste to increase the richness of gravy but I make it a bit light so don't add anything except oil.
