Method 👉Roast the coconut and coriander seed without oil.
Roast rest all ingredients with oil.cool it grind to fine powder. 👉Give slit to baigan place them in salt water. 👉In a blender add the ingredients under masala. Add little water and grind to fine paste. Add coriander leaves and keep aside. 👉Now stuff the masala into the baigan. 👉In a kadai heat oil add mustard seed curry leaves hing baigan and left over masala. 👉Mix it well.add little water. cover the lid and cook till baigan is soft.
👉Serve with rice chapati or pathari. Enjoy.
💖If you want more spicy add red chilli powder as per your taste. If spice masala powder is remaining you can store in airtight container and use later.
