Baigan masala


Ingredients
Baigan/Brinjal; 4-6

Mustard Seeds1 tsp

Curry leaves few

Oil 2 tbsp

Hing a pinch

Coriander leaves

Masala for grinding


Fresh Grated Coconut 2 cups

Green chillies 3

Turmeric Powder; 1tsp

Roasted Peanuts coarse powder 1/2 Cup

Home made masala powder 11/2tbsp

Grated Jaggery 11/2 tbsp

Tamarind; 1 tbsp

Salt to Taste


Homemade masala powder
Coriander seeds 2 tbsp

White Sesame seed 1tsp

Black sesame seed 1tsp

Dry coconut 11/2 tbsp

Cumin seed 1tsp

Black cumin seed 1tsp

Dalchini 1/2 inch

Turmeric powder 1/4 tsl

Seed of 1 black cardamom

Dry red chilli 4

Cloves 3

Oil 1tbsp





Method
👉Roast the coconut and coriander seed without oil.

Roast rest all ingredients with oil.cool it grind to fine powder.
👉Give slit to baigan place them in salt water.
👉In a blender add the ingredients under masala. Add little water and grind to fine paste. Add coriander leaves and keep aside.
👉Now stuff the masala into the baigan.
👉In a kadai heat oil add mustard seed curry leaves hing baigan and left over masala.
👉Mix it well.add little water. cover the lid and cook till baigan is soft.

👉Serve with rice chapati or pathari. Enjoy.


💖If you want more spicy add red chilli powder as per your taste.
If spice masala powder is remaining you can store in airtight container and use later.
