Banana Omelette Recipe

INGREDIENTS
1 ripe banana
1 egg yolk
¼ teaspoon black pepper powder
Oil for pan frying the omelette


METHOD
1) Mash the banana with a fork if it is ripe enough. Mine was still a little firm, so I pulsed it in a blender.
2) In a mixing bowl whisk the banana with the egg yolk till well combined.
3) Season with black pepper powder
4) Heat a pan and drizzle a little oil on it. Pour half the batter on the pan.
5) Cover and cook on a low to medium flame for 1-2 minutes.
6) Flip the omelette carefully and cook the other side as well.
7) Repeat with the remaining batter. Serve warm.
