Burma calling - from kitchen with love.

I’m always on the hunt for new cuisine that are healthy and quick to make. As Ina is just 3 I cannot afford to experiment more and always try to keep it light with respect to spices.

So the other day we were in a house party and I had a chance to have Khow suey - the most decently flavoured dish ever. Even Ina is a big time fan now.

What is khow suey ?
It’s a one dish soup meal and a Burmese dish.

Origin: Myanmar ( Burma)

Key ingredients: Egg noodles, beef or chicken curry made in coconut milk.

My version of khow suey:
Ingredients:
For the curry -
Oil - Half cup.
Chicken -Boneless 250 grams cut in threads or cubes.
Ginger garlic paste - 3 tsp.
Onion- Half medium sized chopped in cubes.
Coconut milk - 2 cup ( or as per required).
Gram flour- 3 tbsp.
Lemon grass - 4/5 leaves ( if available)
Salt - As per required.

For toppings -
Lemon : 1 tsp zest and 4 tsp juice.
Egg - 2/3 boiled sliced eggs.
Egg noodle - 500 grams boiled and sieved.
Garlic - 8-10 finely chopped and roasted ( go for ready ones if u have)
Groundnut - Handful roasted.
Onion - finely chopped and fried. ( Birista sounds familiar)
Coriander- Handful chopped.
Any other choice of herb.

Method:
1. Heat a pan add oil let it heat. Add in ginger garlic paste and onions. Add salt. Cook until onion is soft . Add chicken and cook until chicken turns golden or sticks to the pan. Tofu or paneer goes in for the vegetarians.
2. Add in coconut milk let simmer. Add lemon grass and cook until the aroma of lemon comes.
3. To check with the consistency of the gravy add in gram flour and keep stirring until its thick enough. Curry done.
4. Pour in a bowl, add noodles.
5. Play along with your choice of toppings. As much as required. This is the best part.

We make Khow Suey frequently at home. My granny saas was a Burmese and their food always had burmese touch. I use to get irritated because its lot of work but its yummiest of all.
