Coconut Rice
Ingredients
1 cup Rice
1 3/4 liter Dilute Coconut Milk
1/4 cup Water
Salt

For seasoning
2 tbsps Oil
15 Cashew Nuts
1 tsp Mustard Seeds
1 tsp Cumin Seeds
1 tsp Bengal Gram
1 tsp Black Gram
A Sprig Curry Leaves
4 Sliced Green Chillies
1 cup Raw Coconut Grated (Half a Coconut)
Green Coriander – a little

Preparation Method
1. Add oil and salt to the cooked rice and mix well. Then keep aside.
2. Heat a pan with oil and once it is hot enough, add mustard seeds, urad dal, cumin seeds. Then saute for a few seconds.
3.Now add channa dal, dry chillies, green chillies and cashew nut. Saute for few minutes until they change their colour slightly.
4. Add hing and curry leaves then fry for a couple of seconds. Now add the grated coconut and sauté on low - medium flame until you get a nice aroma or slight colour change (Do not burn the coconut).
5. Now add cooked rice and mix well until it is nicely combined with the coconut mixture. Add salt as per your taste and mix well again.
6. Finally, add chopped coriander leaves and switch off the flame.
