INGREDIENTS
1 egg yolk
½ cup cooked quinoa
1 teaspoon finely grated carrot
1 teaspoon finely chopped french bean (optional)
1 teaspoon butter
A fat pinch of black pepper
METHOD
1) Melt butter in a non-stick pan. Add the grated carrot and chopped French beans and fry for a minute.
2) Add the cooked quinoa to the pan and stir fry for 1-2 minutes.
3) Add beaten egg yolk to the quinoa followed by freshly crushed black pepper.
4) Stir fry constantly for about 2 minutes so that the egg yolk gets scrambled and coats the quinoa grains.
5) Serve the egg yolk quinoa stir fry warm.
