Eggs are an amazing food choice to support the body with the daily requirement of nutrients as well as support the growth and development of the fetus. A simple egg salad with the added goodness of a few veggies is super delicious and easy to make food option.
Ingredients:
6 eggs (fully boiled)
Coriander leaves (finely chopped)
2 boiled Potatoes
2 lettuce leaves
1 Capsicum
1 onion
1 Tomato
2 tsp lemon juice
Salt
Black pepper
How to prepare:
- Cut the boiled eggs and vegetables into pieces.
- Peel the boiled potatoes and partially mash them
- To a bowl add all the vegetables, mashed potatoes, and eggs.
-Add a pinch of salt, pepper, 2 tsp lemon juice, and chopped coriander.
-Mix the ingredients well and garnish with some more coriander leaves.
