Sweet and savoury Mathri recipes for Holi!!
Mathri is a traditional Indian snack which is very popular in many regions in India. It is prepared on festivals like Holi, Diwali, karvachauth and can be enjoyed as a chai time snack. When biscuits were not there dishes like mathris were prepared and even carried for long distance journeys and given in marriages too!!
Methi Mathri (will make 20 pieces)
Ingredients
1.5 cup maida

2 tbsp wheat flour

1 tbsp rolled oats

1 tbsp sooji for crispiness

5 tbsp oil for moyan

Salt to taste

1 tsp ajwain, 1/2 tea spoon pepper powder

2 tbsp kasoori Methi crushed with hands

Oil for frying
Method

1. Take a bowl and mix all the flours and spices and mix well. Add moyan oil and again try to mix well with hands so as to make a crumble consistency.
2. Take little water by and by and knead a tough dough even harder than pooris and let it rest for 20 minutes.
3. Heat oil to medium hot and take small batches of the dough and make either thick mathris by pressing with hands or thin ones by rolling pin and use fork to make holes so that it doesn't rise on frying.
4. Put mathris in medium hot oil to fry. Frying has to be done on simmer with lots of patience as it takes time to cook well.
Sweet kesariya Mathri
Ingredients (will make 15 pieces)
2 cup maida

4 tbsp oil for moyan

Water to knead the dough
For sugar syrup
1 cup sugar

1/2 cup water

A pinch of kesar, 4-5 cloves, 1-2 elaichi
Method
1. Mix moyan oil in maida and mix by hands to make crumble consistency.
2. Knead a hard dough using little water by and by and let it rest for 20 minutes.
3. Take small batches of the rested dough and with rolling pin make small mathris and use fork to make holes in it.
4. Fry these mathris in medium hot oil at simmer till golden brown.
For chaashni
1. In a pan add sugar, water, cloves, saffron and elaichi and let it simmer.
2. First sugar will dissolve and slowly mixture will thicken to form a one taar and then two taar chaashni. You can check by putting a drop on a plate and with fingers see how many taars are formed.
Finally when chaashni is ready, put hot made mathris in it and soak for a minute.
You may garnish it with nuts.
