Hello mommies!!
Most of us have the question that our toddlers throw tantrums when it comes to food!! They won't eat what's prepared, or would want to eat junk only... Obviously not the very healthy option. My daughter is a tad bit different, mostly she eats what's prepared, but has her meltdown moments too!! She doesn't eat pizza, burgers or pasta, so it's good that way, but then, what to do when she doesn't want to eat regular food too, and decorating the plate doesn't work either?

Here is one of my go to snack idea when she refuses to have ragi in any other way, I turn it into a cookie, easy to munch and she happily carries it in her lunch box too. It's maida and artificial flavouring free, so double yayyy!!!

Put on your chef hat and here we go:

Ragi cookies

🍉Ragi flour : 1/2 cup

🍉 Whole-wheat flour: 1/2 cup

🍉Cold butter (better if refrigerated) : 1/2 cup

🍉 Powdered sugar: 1/2 cup (you could use grated jaggery too)

🍉1 tsp baking powder

🍉Crushed cardamom powder - 1/2 tsp for flavour

🍉 Milk : 2 spoons (to knead the dough)

Method:
🍉Dry roast the ragi flour in a pan for few minutes till it starts giving a nice aroma and raw smell goes away. Once done, switch off the flame and let it cool down completely.

🍉In a big bowl, take the cooled down ragi flour. Add whole-wheat flour to it n mix. Add the powdered sugar, cardamom powder, baking powder and cold butter cut into cubes. Mix well with fingers till the mixture resembles sand or crumbles while mixing.

🍉Then add a bit of milk at a time n knead well till the dough comes together. Do not add too much milk, otherwise the dough will be too loose. 1-2 spoons should be enough.

🍉 after the dough is done, wrap it with a cling wrap or a clean cloth, and keep in the fridge to chill for 30 mins.

🍉Take out the dough, make small balls out of it and flatten into biscuits shape. Arrange on a greased baking tray

🍉Bake in a preheated oven at 180°C for 20 minutes or until done.

🍉Each oven is different so it might take more or less time depending on your oven. Mine is usually done by 20-25 mins.

🍉Take it out and leave down to cool completely. They will harden up once cooled. Store in an airtight container.

🍉These last for 7-10 days. For prolonged period, u can refrigerate them as well.
