I adopted this receipy from a cookbook..i made it...it was super yummy so i thought to share this with u all ..
so here we go... How to make fried modaks?? 1-Take coconut,jaggery and cardamom powder in a pan on medium flame..Mix them well and cook with stirring continuosly..
2-Jaggery will start melt down..Cook it untill the mixture becomes semi-solid..Dont cook it for longer otherwise stuffing will become vry hard...
Now,keep the stuffing aside and let it cool down...
3-lets make outer layer of modak..For this take all purpose flour,semolina,salt in a bowl..Add a tablespoon of oil and mix it well using your fingertips..
4-Add some milk and knead untill the dough will become smooth..now,let it sit for 10 mints...
5-After 10min,knead the dough again and divide it into various small portions..Roll the portions into small balls and roll it onto the rolling board..Keep the edges thinner than the centre part..
6-put some stuffing into the centre and apply water and milk on the edges with your fingertips or pastry brush..
7-Now,take it on to your palm and start pinching the edges and make pleats for the outer cover..More near you make the pleats,more beautifull it looks..
8-Now,bring all the pleats together at the centre very carefully..And then pinch them all together to seal it..Do the same with other left portions u made before..
9-At that time heat the oil into the pan on medium flame for deep fry..Fry untill they becomes golden brown..keep it mind that oil should be medium hot... Heyyyy, now your modaks r ready..let them cool and offer them to lord ganesha first... pls tell me in comments how u all find my receipy...looks yummy na....
