Hey Mommies ! Today, in this post, I am gonna share what I have been doing with Srija's leftover food. So my today's recipe is made from leftover carrot puree-
Recipe #18: Paav Bhaji
INGREDIENTS
Mustard oil
Eggplant 🍆
5 Garlic cloves
Cooking oil
Carrot 🥕 puree
Boiled potatoes 🥔
Green peas
Onion , tomato 🍅 & chilly 🌶️ paste
Ginger Garlic paste
Cumin powder
Turmeric powder
Coriander powder
Red chili 🌶️ powder
Salt 🧂 to taste
Asfotida
Coriender leaves
Cottage cheese
Garam masala
Some chopped onions for garnishing
Lemon 🍋
METHOD
🥕 Prick the eggplant 🍆 and insert garlic cloves into it. Apply mustard oil on the eggplant 🍆 & roast it either on the stove or in the microwave.
🥕 In a pan, heat cooking oil and add ginger Garlic paste, onion, tomato 🍅 and chilly 🌶️ paste, asfotida & turmeric powder.
🥕 Add other spices like cumin powder, coriender powder, red chilly 🌶️ powder & salt 🧂 to taste.
🥕 Once the masala is roasted thoroughly, add the leftover carrot 🥕 puree, boiled potatoes 🥔, roasted eggplant 🍆 & green peas. Give it a stir and allow it to cook for 15 mins.
