Panjiri Modak Ingredients For outer covering 2 cups rice flour 1/4 tsp salt 1 tsp ghee Water Ingredients and method for filling In a heavy bottom kadhaai add ghee. When hot add 1.5 cups wheat flour and 1/2 cup sooji. On low flame roast it till it is brown and gives a good smell. Also add chopped nuts of choice and mix a bit in the roasting flours. Switch off the gas and take out the flours in a plate. Add elaichi powder and 1 cup sugar and mix. The sugar will melt a bit. The filling for the modaks is ready. Method for Modaks 1. In a pan heat 2 cups water. When it comes to boil, add salt and ghee and mix well. 2. Add rice flour slowly and mix thoroughly to get a dough like consistency. Switch off gas and cover with lid and let it rest for 15 minutes. 3. Once dough is warm, knead it with little oil in hands. 4. Take small portions and either by hands or with a modak mould, give modak shape. 5. Fill with filling and close. Steam the midaks for 15-18 minutes. Yummy panjiri modaks are ready!!
