#momathon2 Gujarati's are known for their love for food. Farsans or what we call snacks is a very important part of their cuisine. Savoury items like dhoklas (there are many varieties), muthias, khakhara's, chakali, khaandavi, sev Khamani, dalwada's etc are few of them. Living in Gujarat for more than a decade now, I have many friends from whom I have learnt a few dishes but Thepla remains my all time favourite. It is a kind of bread made with wheat, besan and methi as its main ingredients. I love making Thepla's almost every week in winters due to the following reasons. 1. Thepla's are really easy to make when you have chopped methi or fenugreek at home and are a very good way to make your kids and family eat a healthy snack. Methi is known for its good iron and calcium content and besan or chick pea flour and wheat are healthy cereals. 2. Thepla's are a very versatile dish as you can eat them in breakfast, lunch or dinner. It is a good option for lunch box preparation and can be carried easily while travelling. It tastes good when hot but stays good for many days and does not dry up easily. 3. Thepla's can be served with a variety of accompaniments like curd, raita, pickles, chatnis and even a little butter for kids. So I am sharing its recipe. Ingredients (will make 12 Thepla's)
3 cups wheat flour
1 cup besan flour
1 cup finely chopped fenugreek (methi)
1 tea spoon turmeric
1/2 tea spoon chilli powder
Salt to taste
1 tea spoon coriander powder
1/2 tea spoon zeera powder
1 pinch hing
1 tea spoon carom seeds (ajwain)
1 tea spoon kasuri methi (optional)
A pinch of pepper (optional)
1 table spoon oil to add while making the dough.
Oil for cooking the Thepla's Method 1. Mix all the above given ingredients and knead a dough with water as we do for a roti. Rest the dough for a few minutes. 2. Take a non stick pan and start heating it.;; Roll out thin roti's from the dough and place it on the pan. When a bit cooked, turn it. Again turn and apply little oil on one side and cook. Then turn again and cook. The Thepla's are ready to serve.
