mommies! an excellent way to load up on some protein for the day. Double egg omelette with sauteed peas and paneer. Makes an excellent post workout meal as well.
Recipe:
for the omelette:
Crack open 2 eggs in a bowl. Add seasonings of your choice (i added salt, chilli flakes, turmeric, mixed herbs)
Beat it well. You can also add some milk if you want. Heat a non stick pan and grease it with about 2-3 tsps of oil.Once the pan is ready pour the egg batter. (you can add cut veggies here of your choice- tomatoes, capsicum, mushrooms for eg)
Now cook the omelette well till it becomes fluffy and golden brown.
Once done transfer it to a plate. Sauteed masala paneer peas:
Extremely simple recipe. Just take a cup of frozen peas and wash them once under running water. Take 4-5 frozen paneer cubes and put asking with peas into a microwave safe bowl. Add seasonings of your choice. Now add a few spoons of water and toss everything together. Microwave for 4 to 5 minutes. Check if you want to cook it some more.
Done !
Transfer this to the plate and enjoy along with your omelette. Have a glass of milk on the side for a good dose of calcium. Makes for a perfect quick breakfast when you have a baby to run after.
