Today I want to share with you a delicious, palatable and nutritious cuisine from Orissa, the State where I belong to !
It's a very healthy food for both Mom and baby ..
Dalma: This cuisine is considered as one of the most nutritious food in Orissa . It is a wholesome food and can be eaten with rice and chapati or just like that . It is very good for kids as you have everything in it. We often have it during pujas and fast too with a little bit of modification that is avoiding onion as garlic . Infact it's included in the prasad of temples . Recipe : Arhar dal , you can mix moong dal too. Vegetables required potato , raw papaya , raw banana, beans , pumpkin , Brinjal, cauliflower etc . You can add any vegetable you have . Boil the dal and the vegetables to just cook along with haldi and salt . After it's cooked keep aside . You can add little coconut too in the grated from .
Now the tadka : 1. Normal tadka including crushed garlic , jeera, mustard seeds , red chili and curry pata . Add roasted And powdered Jeera after the tadka to the Dal..
2. The one to have during fast , here you can either avoid tadka or add just add one tsp of ghee and panch phutan( jeera, mustard, kalonji , Methi , saunf ) red chili ,curry leaves and use as tadka This includes all the daily requirements of vitamins and protein due to the presence of Dal and all other essential vegetables .
