Sharing with you all my Mom,s recipe .. Ambila#Vegetable kadhi Ingredients: Vegetables like pumpkin , lady finger , Brinjal ,Reddish Besan , curd, curry leaves , panch phoran, red chillies , garlic pods , tomatoes Method : Cut the vegetables and boil with salt and haldi..When it's half boiled slow the flame.
Make a mixture of one cup curd ,3 tsp of besan and tomato and add to the boiling vegetables and let it boil again .. Switch off when the vegetables are cooked .. Now the tadka :
Take a kadhai and pour little mustard oil, add panch phoran(mustard ,jeera, ajwain ,meethi,kalsonji) next add crushed garlic pods and red chilies then curry patta ..Add this tadka to the kadhi (you can also add little hing ) Garnish with Corriander leaves .Your kadhi is done !! You can adjust the quantity of tomato and curd according to the sourness you want in the kadhi ... Note : for ladyfinger you need to first fry little bit in oil then add them to the boiling vegetables ..
