Healthy Chick pea salad!!
A very nutrtious and yummy bowl full of protein rich chick peas and veggies!!..it can be an ideal morning breakfast which keeps you energetic and tastes yum!!.. I have added a little turmeric while boiling chick peas as I like the taste but one can avoid.
Ingredients (for 4-5 servings)
2 cups boiled chickpeas
1 onion finely chopped
1 finely chopped tomato (deseeded)
1/2 capsicum finely chopped
1 chopped green chilli (optional)
Chopped fresh coriander
Salt and pepper to taste
1 tablespoon lemon juice
2 tablespoon homemade tamarind chutney
1 tablespoon homemade mint chutney
Method
1. Soak the chick peas overnight. Pressure cook them in the morning at simmer for 5-6 whistles. They should be properly boiled and not raw, a bite should not be there.
2. Add rest of the ingredients in this and give a good mix.
Serve it cold or warm.
Serving suggestions
Boil the chickpeas with care as they should neither be raw nor over cooked as they will break.You may add carrots, cucumber and boiled corn in this, also other sprouts. If making for kids tiffin, avoid green chillies. If you don't have home made tamarind or green chatni, just add little black salt and pepper mixed with lemon juice or even Chaat masala.
