Amaranth or rajgira ladoo-

Amaranth is a super food. Amaranth is high protein grain. This super grain is rich in fiber and has many micronutrients. It is a good source of calcium, magnesium, manganese, phosphorus and iron. It has health promoting antioxidants.it can lower down cholesterol. It's a complete protein containing all the essential amino acids.

So many benefits are there....

Here is the recipe...
INGREDIENTS-

Amaranth seeds- 1cup

Jaggery- 1/2cup

Ghee- 2-3tsp

Raisins- 2tbsp

Cashew nuts - 2tbsp

Cardamom powder-1/2tsp

Water - 1/8 cup
Method-

Heat a medium pan over medium heat. Once hot add in 1-2 tbsp raw amaranth seeds then cover with a lid and quickly slide the pan back and forth just above the burner.

When amaranth seeds are slowing empty it into a bowl.
Heat jaggery in a pan with water. When the jaggery water becomes little thick take little bit of syrup in a spoon and add it to the bowl of water. Gather the syrup to make a firm ball with ur fingers. If u are able to form a nice ball that is the correct stage.

Switch off the flame and remove the jaggery syrup from heat. Immediately add the popped amaranth seeds to the hot jaggery syrup. Add powdered Cardamom cashew nuts and raisins at this stage.

Mix everything together with a spoon.
Now apply some ghee in ur palm and start making ladoos by taking a small portion with a spoon. Let these ladoos cool down for 3-4hrs at room temperature and store in an airtight container after it.

The healthy amaranth ladoos are ready!!!!



Ps- jaggery syrup will be hot it may burn the skin if touched directly.

You should be really quick in shaping ladoos, if the mixture is cooled down completely shaping the ladoos are difficult.
