This is a lip smacking dish which even adults can't resist and the best part is that it's healthy and has just natural sweetness from dates!!
Apple and dates phirni!! Ingredients (for 2-3 servings) 1/2 apple finely chopped 3 cups milk (you can take low fat milk) 8-10 dates soaked in water for half an hour and chopped in small pieces 1/4 cup rice soaked in water for 4 hours Few strands of kesar 1/2 tsp elaichi powder Finely chopped pistachios for garnish Preparation: soak rice before hand and grind it in a blender with little water to make a liquid like consistency. This is our rice solution for phirni. Method 1. Take milk in a pan and keep it for boiling. After one boil, let it become little thick on simmer. Add kesar strands to it. We don't need too thick milk. Just 10 minutes reduction is enough. 2. On the other side add chopped apple to a pan and add half cup water. Let this apple cook in water on simmer till it is soft. Keep mashing it a little in between. 3. Now, once the milk is reduced add the rice solution to it while stirring continuously and let it cook. Also add chopped dates and elaichi powder and cook. 4. After few minutes you will see the mixture attaining thick consistency. Remove it from gas and let it cool to room temperature. 5. Also by now apple must have cooked. It also needs to be at room temperature. Now mix cooked apple to the phirni mix. Your dish is ready. You can garnish it with pistachios. Refrigerate it and serve it chilled. Serving suggestions 1. If you want to give this to babies around 11-12 months old, grate the apple and grind the dates and then cook. You can add nuts powder. Serve at room temperature. 2. You can use expressed Breastmilk or formula to make it. 3. You can also make this dish with cinnamon flavor by adding cinnamon instead of elaichi powder. For more sweetness one can add honey. Honey can be given to kids above one year only.
