2-3tbsp ghee / butter 1 tsp cumin seeds / jeera ½ tsp black pepper 1 bay leaf / tej patta 4-5 cloves / lavang 2 star anise 1 inch cinnamon stick / dalchini 15 cashews, 1 onion thinly sliced 1 tomato, finely chopped 1 potato, cubed Fistful beans, chopped 1/4th cauliflower florets 1/2 cup peas 1 carrot, chopped 2 cup basmati rice, soaked 1 hr 2 cups waters Salt to taste

pudina masala paste recipe:
In a small blender take pudina, coriander leaves garlic, ginger and green chillis, few slices of onions and coconut.then add water and blend to smooth paste.
pressure cooking pulao recipe:
In a rice cooker or pressure cooker heat ghee, add cumin seeds and other dry spices.saute them on medium flame till they turn aromatic.To this add cashews and sliced onions & saute till they turn golden brown. Now add chopped tomatoes and saute till they turn out is like a paste . To this add vegetables ( beans carrot peas & cauliflower ) and saute for 5 min. Now add prepared masala paste and saute till the raw smell is out ( around 5min) .then add soaked basmati rice.saute them gently without breaking the grains.then add 2 cups of water, add salt to taste & mix well and pressure cook for 2 whistles on medium flame. If it is a rice cooker it would switch off to the keep warm state once done . Serve it with raita of your choice or even plain salted yogurt.
