Rajasthani Kadhi

Ingredients for Rajasthani Kadhi-SK Khazana Recipe
Sour yogurt 1 1/2 cups
Gram flour (besan) 1/4 cup
Ginger-garlic-green chilli paste 1 tablespoon
Salt to taste
Turmeric powder 1/4 teaspoon
Red chilli powder 1 teaspoon
Ghee 3 tablespoons
Cinnamon 1 inch
Cloves 3-4
Bay leaf 1
Black peppercorns 6-8
Fenugreek seeds (methi dana) 1/2 teaspoon
Cumin seeds 1 teaspoon
Asafoetida (hing) a large pi
Ginger chopped 1 tablespoon
Medium onions sliced 2
Fresh coriander sprig to garnish

Method
Step 1
Whisk together yogurt, gram flour, ginger-garlic-green chilli paste and salt and whisk together. Add turmeric powder and chilli powder and whisk again.
Step 2
Heat ghee in a deep non-stick pan. Add cinnamon, cloves, bay leaf, peppercorns, fenugreek seeds, cumin seeds, asafoetida, ginger and onions, mix and sauté till onions turn translucent.
Step 3
Add yogurt mixture and mix well. Add 2 cups water and mix again. Add salt, mix and bring to a boil.
Step 4
Garnish with coriander sprig and serve hot with steamed rice.
