15 baby potatoes peeled and washed and slit in a cross to fill the masala as we do in bharwa vegetables
5 small onions, peeled, washed and slit in a cross to fill masala
Green chillies slit from middle to fill masala (optional) For masala
2 tsp salt
1 tsp turmeric
1/2 tsp red chili powder
2 tbsp coriander powder
1 tsp zeera powder
1/2 tsp garam masala
2 tbsp aamchoor powder 2 tbsp oil for cooking and 1/2 tsp hing, 1tsp zeera, 1 tea spoon saunf, 1 tsp ajwain for tadka Method 1. Mix all the ingredients of the masala well and fill potatoes, onions and chillies with this masala. Keep aside. 2. Heat oil in a heavy bottom pan. When hot add hing, zeera, saunf and ajwain seeds. 3. To the tadka add the vegetables one by one keeping the slit side up. 4. Mix a bit with light hand and cover with a lid. Place a tawa below the kadai to give dum to the vegetable so that it can cook. In between after every 3-4 minutes check and see if it is cooking properly. 5. After around 20 minutes check if the potatoes are soft. Then remove the tawa and on simmer let it roast. The tasty chatpate aloo is ready.
