Spring onion greens/ corriander for garnish (optional)
Oil and water for cooking Method 1. Heat about 1.5 tbsp oil in a pan or wok and when oil is hot, add rice and on simmer roast them till they achieve little brown color. 2. Add garlic and onion one by one and saute them till the onion is cooked and translucent in color. Then add veggies of choice like capsicum, carrots, peas, boiled corn etc and saute for 2-3 minutes. If you are adding boiled rajma then don't add them yet. You can also add mushrooms, broccoli etc. 3. Once veggies are done, add fresh grated tomatoes and 2 tbsp tomato puree or ketchup whatever is available. Also add salt and give a good mix. Let the tomatoes cook well. 4. Now add double the quantity of water as you have taken the rice and mix and cover the pan with lid and on simmer let it cook for 7-10 minutes. 5. Open the lid, add rajmas if you want and pepper powder to taste, else only pepper powder and again cover with lid and cook till rice are done. Switch off the gas and let it remain like that for 10 minutes. Garnish it and Serve hot with garlic toast or sauteed veggies or any sauce of choice.
You can also add mixed herbs or oregano if you like.
