Pesarattu or Whole green moong dosa...

Famous in coastal Andhra, sure to take your taste buds on a wavy ride.;

Ingredients required;
1cup - green moon
1.5 tbsp - rice;
2 green chillies
1/2 tsp jeera;
Salt as per taste
Hing a pinch
¹/⁴tsp - tumeric/Haldi;
¹/² inch - ginger;
Water for making a batter
Oil to make dosa.;
Soak the moong and rice together overnight. In the morning wash out and drain off the water. Now add green chillies, haldi, hing, salt, jeera and ginger. Pour water and grind to a smooth batter. Batter should neither be very thick noe very watery. Dosa batter consistency is fine. You can add chopped onion and; jeera while make the dosa. Ensure the pan is hot enough.;

Coconut chutney.;
Ingredients required
Fresh coconut roughly chopped -1 bowl
¹/² cup - roasted Bengal gram
¹/⁴cup - roasted peanuts
2 green chillies
1 clove of garlic
Small piece of tamarind;
Salt as per taste
Water for grinding.;

For seasoning;
Mustard Seeds, cumin seeds, one red chilli, few curry leaves , hing and oil;

Put all the ingredients together (except seasoning ingredients), add required amount of water and blend together in to a smooth paste... add the seasoning and it's ready to serve.;

Ginger chutney or Alam chutney.;

Ingredients required.;
1.5 inch ginger;
1.5 cup tamarind pulp ( rice cooker cup)
2 tbsp Jaggery
7-8 red chilli
Mustard Seed 1tsp
Cumin seeds 1tsp
Chana daal 2tsp
Urd daal 2 tsp;
Salt as per taste
Haldi a pinch
Hing a pinch
Oil for seasoning

In a pan heat the oil, add mustard seeds, cumin seeds, chana dal, urd dal , hing , haldi and red chillies. Roast slightly, don't let it burn. Now add this seasoning and rest of the ingredients together and blend until smooth. It's ready to serve.
