I am a big fan of one pot dishes and pulao is one of my favorites. When one is bored of eating regular food or wants to make something easy, wholesome and yummy too pulao is a good option.
There are so many recipe's for this, probably everyone has their own family favourite and though I cook it in different ways, this one which I am sharing today is good for lunch, dinner, parties, picnics and tiffin too..
Vegetable pulao (for 5-6 people)
1 bowl basmati rice/ normal rice washed well and soaked for 1/2 hour
Chopped vegetables (potato, carrots, peas, capsicum, beans etc)
2 tbsp oil or ghee as per choice
2 medium onions sliced
1 tomato chopped in chunks
1 tbsp chopped garlic
1 tbsp chopped ginger
Khadaa masala (1 bay leaf, few cloves and peppercorns, 2-3 green elaichi, 1 cinnamon sticks, 1 badi elaichi)
Salt and red chilli powder to taste
1 tbsp sabut zeera
1 tsp garam masala
1 tsp dhaniya powder (optional)
1/2 tsp sugar
Water for cooking
Method
1. Heat a thick bottom pan. Add oil and let it heat well. Add sabut zeera and let it crackle. Now add all khadaa masala and bhoono for few seconds.
2. Now add garlic, saute a bit, then ginger and then add sliced onion. Cook the till they are brown and a little charred.
3. Add all veggies and saute them for a minute. Then add salt, and rest of the spices and sugar too.
4. When you see little oil separating from veggies, add tomatoes and saute a bit. slowly add drained rice.
5. Add double the amount of water as you have taken the rice and a little more.
Cover and cook on simmer, while checking. When you see the rice is well cooked (it will come up and grains will be long. Water must have dried) switch off the gas and let it be like that for 10-15 minutes.
Serve with raita.

I don't use any masala...just salt, turmeric, red chilli and home made garam masala...khadaa masala is also at home only..waise <font color ="#3b5998"><b> @6372cbe0649d830016904995 </b></font> has told about parampara masala so will see if I get here..baadshah one I think is available near my home..will try once..

<b><span style="color:#3B5998;"> @616d9126ca67e40013aaf3e5 </span></b> , i also didnt use any type of masala for poolav n biryani..one time just i wished n tried, then in laws n hubby likes it..so using continue..Baadsah masala..nd for schezwan rice using ching's sczvn fried rice masala..<br> will add little sugar next time nd taste it..

Dear <a href="http://app.babychakra.com/user/116711"><b><font color ="#3b5998">Madhavi Cholera</font></b></a>; I add sugar so that it caramelise things..specially onions..its very less as we Punjabi's like spicy.. It balances spice..I am sure your one is delicious..you use biryani masala..which one because I have not used biryani masala..adding butter definitely gives shine and more taste..makhkhan lag jata hai na..
