Pinwheel Samosas!!

It's Diwali next week and amidst all the Diwali ki safaai, decorations, celebrations, family gatherings, shopping etc good food is one thing that we all want. So, this Diwali try these pinwheel Samosas, which is a hatkey recipe. I have tried to make it healthier by adding oats and wheat flour to it.

Pinwheel samosas (for 12 - 14 pieces)

Ingredients for dough

1/2 cup maida, 2 tbsp sooji, 4 tbsp oats (roasted), 2 tbsp wheat flour, 1 tbsp oil, 1 tsp salt, 1/2 tsp powder sugar, 1 tsp ajwain, water to knead the dough.

You can roast and powder the oats and use. Also you can add pepper or red chilli powder if you like.

Method
Mix all these ingredients in a bowl and knead a hard Mathri like dough using less water. Keep it covered to rest for 20 -25 minutes.

For potato filling
2 medium boiled potatoes mashed, salt and red chilli powder to taste, 2 tsp haldi powder, 1 tbsp corriander powder, 1 tsp zeera powder, 1 tbsp aamchoor, chopped Green corriander

Method
Mix all the ingredients in a bowl and your filling is ready. You can also add finely chopped veggies of choice and paneer to it.

Also in a small bowl make a slurry of cornflour with water and keep aside.

Final preparation
1. Keep some oil to heat for frying.

2. On a rolling board, sprinkle little flour. Take a big ball sized potion of the dough and roll it into a thick big roti.

3. Spread the filling evenly on this roti, and from one side roll it tightly as we make a roti roll.

4. Cut about 2 inch pieces of this roll and slightly press all the pieces.

5. Fry them in medium hot oil and serve with dip of choice.

Serving suggestions

1. You can also sprinkle some Chaat masala on it before serving.
2. You can bake these samosas in a preheated oven, for 20 minutes at 180 degrees.
