Mint chatni paneer grilled sandwich!!
This one is for doodh chors like mine who can give hundred excuses for not drinking milk even twice a day!! My MIL once told me how giving paneer to such kids is a very good option so that they don't loose on essential proteins and nutrients.;
Ingredients

4 slices of bread with crust (any bread)

6-8 thin cut slices of paneer

1 medium onion cut into roundels

4 table spoon mint chutney

2 table spoon butter

Salt and pepper to taste;;
For mint chutney I have grinded 1 cup fresh mint leaves with 1/2 cup coriander leaves. I have added 1 green chilli which is optional. I have also added salt to taste, 1 tea spoon sabut zeera and little chat masala and lemon juice for zing.;
Method
1. Take a bread slice and apply butter on it. Now arrange onion slices and sprinkle salt and pepper to taste.
2.; Then arrange paneer slices and; spread chatni generously. You may also marinate paneer in chatni for few minutes and then add that paneer.
3. Cover with the other slice either buttered or not as per choice. You may also apply little tomato ketchup on the covering slice with or without butter.
4. Grill till crisp.;;;;
Serve hot with any dip or sauce. Its super tasty for summers.
