Leftover rice cutlets!!
Ingredients
3 medium boiled potatoes
1 cup leftover boiled rice
Finely chopped veggies like capsicum, carrots, broccoli etc
1 green chilli finely chopped (optional)
Fresh coriander finely chopped
Salt and red chilli powder to taste
1/2 tea spoon crushed pepper
1 table spoon coriander powder
1 tea spoon zeera powder
1 tea spoon chat masala
2 table spoon cornflour
Oil for cooking
1 table spoon cornflour for coating
Method
1. Take a bowl and mash boiked ootatoes well. You can even grate them. Then add rice, veggies and everything else except;
Oil and cornflour kept for coating.
2. Mix well and make desired shape cutlets. In a plate spread 1 table spoon; cornflour. Coat the cutlets with this by shaking off extra cornflour.
3. Fry the cutlets golden crisp.
Enjoy piping hot with sauce or dip of choice.
Instead of rice you can use soaked poha, add brocolli, add small cheese piece in between. They soak very less oil and are very crisp.
