Spinach & Oats Idli! .

Ingredients:
Oats: 1/2 cup
Suji: 1 cup
Spinach: 15-20 leaves
Curd: 1/2 + 1 1/2 cup
Eno: 1 tsp
Lemon juice: 1 tsp
Dry red chili: 5 (optional)
Asafetedia: a small pinch
Cooking Oil: 1 tbsp
Rai: 2 tsp
Curry leaves: 5 leaves
Green chilly: to taste (optional)
Salt to taste. .

Procedure:

Spinach purée:
Wash well and light blanch spinach leaves. Churn and strain the mixture to get a purée.
Bater:
Mix powdered oats, suji, salt, 1/2 cup curd, lemon juice, spinach purée. Add water as required to get a consistency of an idli bater. Then Add eno in the last just before when you are about to put the idlis in the mould. .

Curd:
Strain 1 1/2 cup of curd and add water to make a thin raita like consistency. .

Tadka: (this step is only for mommies, avoid this when you serve the dish to your toddlers)
Heat cooking oil in a pan and add rai, curry leaves, green chilly, asafetedia, dry red chilly. Cook well till it makes a crackling sound. .

Add the bater in the idli mould and let it steam to perfection. Once the idlis are ready serve with curd on top for your toddler and for you add some tadka to give it that kick. Tadaaaa your healthy and super yummy idlis are ready. .
