Spinach Corn Cheese Sandwich Ingredients:- Bread slices 6 Spinach (blanched ) :- 1 Cup Corn ( boiled ) :- ¼ Cup Onion ( Chopped ) :- 1 Garlic ( Minced ) :- 1 tbsp Chilly (Minced ) :- ¼ tbsp Salt , Pepper , Sugar according to your taste Cheese Slice
Method:-
Chop and blanch Spinach. In a Mixer Grinder, Add Spinach, little of milk says 2 tbsp and semi crush Spinach. Heat oil and butter, add onion, garlic, chilly, and stir fry till golden brown. Add Spinach, salt, pepper, sugar and stir fry till almost dry. Add Boiled corn and mix well. Spread the mixture on the bread slice, place a cheese slice, cover with another bread slice and grill it in the griller. Cut into triangles and Serve hot with tomato ketchup.
If you don’t want to use bread, u can use make this as a Spinach Quesadilla also... For Quesadillas, you can use the same Spinach Spread. Many people use tortillas for making this recipe. But I personally love to give my son healthy so instead of Tortillas I use Wheat flour Chapatti. In another bowl, take whole wheat flour; add salt, oil and half of the water. Bring the mixture together and knead into smooth soft dough. Take two small balls from the dough, flatten them and dust with whole wheat flour. Roll and make 2 round chapattis of same size. On the Rolled dough circle ,place your Spinach Spread Mixture , spread some cheese slice on it and keep about 1 inch empty space from the sides. Gently place the Second chapatti on the top. Press and Seal the edges with your fingertips or with fork. On the hot tava, placed the rolled chapatti, when the base is partly cooked, flip the roti. Spread ghee on it and cook both the sides. Once it is cooked, cut into triangle shape and serve.
