Well! I just entered that motherhood zone where my toddler already is picking up on her father's taste-buds. And being momsoon in Mumbai it already gives its way to call for some fried stuff to be snacked on, so I just thought of making my healthy version of oats cutlet, where I infused vegetables in it, well! not because my daughter is picky on veggies but her dad is.
So here we go with having veggies filled oats cooked in minimal oil. Healthy isn't tasteless anymore!!
Serving- 6 medium sized cutlets and 4 mini cutlets. Preparation-10mins
Cooking time-15 mins
Ingredients:
1 cup rolled oats
1 big boiled and mashed potatoe
1/2 cup yellow bell-pepper chopped
1/2 cup red bell-pepper chopped
1 medium (orange)carrot grated (can take more veggies like -cabbage/ cauliflower etc)
1 small onion chopped
1/2 teaspoon chilli flakes
2 green chillies chopped
1/2 teaspoon chat masala
1 inch ginger grated
3 cloves of garlic grated
1 egg(vegeterians may skip egg)
1/2 teaspoon Coriander and zeera powder
A feastful of chopped coriander leaves
Salt to taste
Method: 1. Take 1 teaspoon oil in a nonstick pan and add the grated ginger and garlic and saute for 20 seconds.
2. Add chopped onion, saute for a min.
3. Add chopped vegetables and oats and saute for 3-4mins on medium flame.
4. Remove from stove.
5. In a big bowl, empty the pan ingredients and add mashed potatoe and all the remaining ingredients and mix.(can remove a small portion before adding chillies for your toddler)
6. Prepare medium sized cutlets and pan-fry in 2 teaspoon of oil on medium to low flame for 5 mins each side.
If i do anything except fish or chicken cutlets my husband frowns 😄

Hehehe. For a change, he liked it. I told him you guess it. So he guessed poha. And when i told oats he was like i was close🙄. So i was like eat. All in all he ate but batul didn't. She is on another planet these days. Apni marzi chal rahi he.
