Ingredients:
1 cup Rice flour (200 grams)
1/4 cup Wheat flour (50 grams)
1/2 cup Jaggery (100 grams)
1/2 cup Coconut
2 Ripe bananas
1/2 tsp Cardamom powder
1/8 tsp Baking soda (optional)
1/4 cup Ghee (approx.)
Instructions:
In a saucepan add 1 cup jaggery and 1/4 cup water.
Bring it to boil till jaggery is melted. Once done keep it aside.
In a bowl add 1 cup rice flour and 1/4 cup wheat flour.
Strain and add jaggery syrup and combine everything.
Add 1/2 cup of shredded coconut.
Add 2 ripe bananas.
Add 1/2 tsp cardamom powder and 1/8 tsp of baking soda.
Mix everything well till it becomes idli batter consistency (for achieving the consistency you can add water).
Meanwhile, heat appe/paniyaram pan and 1 tsp of add ghee on each cavity.
Add batter and cook for 2 – 3 minutes.
Flip it over and cook for a minute.
Once done remove from the heat and serve hot.
Notes:
You can make nei appam without banana too, with the same recipe.
You can roast the shredded coconut in the ghee, before adding to the batter.
Baking soda is optional, you can skip if you want.
You can replace the wheat flour with maida.
