INGREDIENTS
1 cup cooked long grain rice
¼ cup boiled sweet corn kernels (I microwaved them for 4 minutes)
1 small onion, finely chopped
2 tablespoon green bell pepper, diced
2 tablespoon red bell pepper, diced
1.5 - 2 tablespoon ghee
Salt to taste (optional)
Black pepper to taste
METHOD
1) Heat a pan. Add ghee to it.
2) Add chopped onions and saute for 1 minute.
3) Add colored bell peppers and stir fry on medium to high flame for few seconds.
4) Now add boiled sweet corns.
5) Season the veggies with little salt.
6) Toss the veggies for another one minute on medium flame.
7) Now add the cooked rice and mix well.
8) Toss the rice with veggies and stir fry for 1- 2 minutes.
9) Lastly add freshly crushed black pepper, mix well .
10) Turn off the flame. Serve the rice plain or with some raita.
