This is one of my go to breakfast options when I don't really have enough time on my hands to cook something elaborate, but I still want to feel like I have had something filling and given myself a 5 star treatment! Veggie Omelette in a Bowl. Yep, you read it right. You can make a delicious omelette with vegetables in a bowl. It's super yummy, very healthy and extremely fluffy. But you would need a microwave for this. Hence the quick breakfast option :-) Break 2 eggs in a microwave safe bowl. Add 1 chopped tomato. You can get a bit daring here and add some other veggies also- onions, capsicum, grated carrot and such. Add a pinch of pepper and salt to taste. Season with mixed herbs and chilli flakes. You could also add finely chopped green chillies. Add 2 tbsp of milk. Finally add 1 tsp of ghee or some cooking oil of your choice. But ghee is really healthy in moderation. You could also add a bit of grated cheese on top. Beat the mix very well. I just use a fork and get to work. Good arm exercise! Once the batter is beaten well, turn on the microwave and place the bowl in. Cool the omelette for a minute and a half. (Adjust the timings depending on your microwave)
Now comes the most exciting part. Watch the omelette when it's cooking. It rises and how!! I wish I could share the video of the same here. The first time it happened I was worried the omelette would spill over. But I have made this a dozen times so far and it's turned out really well. Half way through, stop the timer and mix the contents of the bowl once with a fork. Restart and let it complete cooking. Once done , take the hot bowl out carefully. You could have the omelette as it is or enjoy it with 2 slices of toasted bread of your choice. It's better to avoid white bread though. You could also have some cut fruits on the side or stick to my good old glass of milk.
