Today I have made maharashtrian famous dish i.e Puranpoli,Masala amti,Aamras and rice.
Puranpoli Preparation
🌸 Take a glass bowl and mix flour with water in it. Knead well to make a stiff dough.
🌸Cover the dough and keep aside for 1 hour. 🌸Now take a pressure cooker and add chana dal and water in it. Put the cooker on the gas and heat it over high flame.
🌸Pressure cook the dal and once it's done, strain the excess water.
🌸Transfer the dal in a bowl and allow it to cool.
🌸Once the dal has cooled, add it in a pan and heat it over moderate flame. Add sugar along with 1/2 tbsp of ghee.
🌸Keep stirring. Cook on low flame till the mixture is soft and sticky. Add cardamom powder to it.Once it's done, turn off the flame and keep the it aside.
🌸if u want u can grind the daal
🌸Now knead the dough again, adding salt, water and oil.
🌸Now take a lime-sized lump of the dough and a little larger lump of the dal mixture. Roll out two rounds from the dough on a board sprinkled with rice flour, into flat rounds
🌸Cover the rolled dough round with the dal mixture, and then cover this with the second round. Roll again over this to seal them together, Roll out like a thick chapati.
🌸Heat ghee on a hot tava put the puran poli on it. Keep pressing and turning it so that it cooks well on both sides.(golden brown)
Masalaamti - it is made from the left over cooked chana dal water
Ingredients
1)Onion 1( roughly chopped)
2)dry Coconut 1(grate it or cut into small pieces)
3)Curry leaves
4)Jeera
5)Garlic (8-9 cloves)
6)Ginger
7)coriander
8) turmeric 1/4tbsp
9) kala masala 1 1/2tbsp
Preparation -
🌸hot a pan add onion in it roast them until golden brown, once done keep them aside.
🌸add granted coconut roast them also till they are golden brown. Let both cool onion and coconut.
🌸mix all the ingredients and grind it smooth add water if required.
🌸heat a kadhai put oil.
🌸add this grinded mixture to it and cook for 10mints add turmeric & kala masala keep stiring till the oil oozes out.
🌸add 2-3 glass of water to it stir it properly
🌸add salt as required cook for more 15mints on a medium flame
🌸add chopped coriander to it We all know to make rice 🍚
Aamras
🌸peeloff the outer surface and chop the mango removing the seed
🌸grind the mango piece I usually don't add sugar to it (if u want u can add sugar & cardamom)
