Aloo Baingan with Lehsuni Daal recipe for aloo baingan:
clean and boil 4 to 5 medium potatoes in a pressure cooker for 3 to 4 whistles depending on your cooker. Once done peel and chop into small chunks.
clean and chop 5 to 6 long green brinjals into 1 inch pieces. Immerse them in salt water for some time.
wash and pluck 1 sprig of curry leaves.
In a kadai heat 1 tbsp oil. For tadka put 1 tsp mustard seeds, 1 tsp jeera, pinch of hing, 1 tsp chana dal and fry together till the dal turns golden brown. Now add the brinjal pieces and mix well. After a couple of minutes add 1 tsp each of turmeric and dhaniya powder. Mix everything well. Keep stirring the brinjal till all the spices mix well. Now cover the kadhai and let it cool on sim flame for about 5 minutes. Then stir again and add salt to taste. If the brinjal pieces have become soft add in the cut potatoes. Mix everything well. You can sprinkle some water if you want. Add 2 tsp of kashmiri chilli powder and mix well. Now let this cook for a good 5 to 10 minutes. Keep stirring in between. Finally garnish with chopped coriander leaves. Transfer to a bowl when ready. The key here is to cook on a low flame and mix everything well. Yummy aloo baingan is ready. Lehsuni Dal
Pressure cook 1 cup dal with 2 cups water in the cooker. You could cook the potatoes and the dal at the same time. The dal should become soft and mushy.
Peel 4 garlic pieces and smash it once with the back of your knife. This is a trick I use when I don't want to make paste of the garlic.
In a kadhai add 1 tsp oil. Put tadka of 1 tsp mustard, 1 tsp cumin , pinch of hing and curry leaves. Add the garlic and saute till you get nice aroma. Now add the congress dal and stir. Add a lunch of turmeric and salt to taste. Mix well and let it simmer for a few minutes. Add 1 tsp of chilli powder. If adding kashmiri you can be a bit more generous since it is less spicy. Mix well and let it come to a boil. Garnish with fresh chopped coriander leaves. Turn off the stove and transfer to a bowl. Your simple Lehsuni Daal is ready!
