These homemade granola bars are a winter special recipe which can be made and stored in an airtight container for around 10 days. Besides giving energy, nutrition and warmth to our kids, they are super yummy too so can be an ideal morning or evening snack and can be packed in the tiffin too as a side dish.
Ingredients (for 20 medium sized pieces)
2 cups rice puff (dry roasted)
1 cup rolled oats (dry roasted)
1 cup cornflakes (dry roasted)
1 cup chopped nuts of choice (dry roasted)
1/2 cup berries of Choice
1 tbsp ghee
1.5 cups broken red jaggery
1 tsp vanilla essence or 1 tsp elaichi powder as per choice
Water and oil for cooking
Method
1. Take a big heavy bottom kadai and separately dry roast rice puffs, oats, cornflakes and chopped nuts and take them out in a big thaali to cool a bit. Please take care that patience is required to roast them well on low flame till they are crisp. Each one has different roasting time so don't mix and roast.
2. Take the same kadaai in which roasting was done and add 1 tbsp ghee. When it melts, add broken jaggery and 1 tbsp water. A liquid kind of mix will be formed. Switch off the gas and add all the roasted contents in it and give a quick mix.
3. Add vanilla essence or elaichi powder depending on what flavor you like more.
4. Once the mix is ready, take a bakeware and grease it with some oil. Now transfer all the contents in it and press it well so that it sets.
5. Bake this at about 180 degrees for 8-10 minutes.
Your granola bars are ready. Once cool, you can cut them into pieces and store it in an airtight container outside fridge. They will stay good for 10 days. You can wrap them in colourful paper to make them attractive for kids.
Please note that depending on your microwave or oven power you need to set the right temperature and time for baking. Keep a watch on it. Also you can add khus khus, sesame, pumpkin, fox nuts and sunflower seeds if you wish. Just roast them first and add.
