It can be a perfect after school or evening snack and also a tiffin snack. Paneer is a very good source of protein and calcium and given this way even fussy eaters will gobble it up!!..it helps in weight gain too. Ingredients (for 4-5 servings) 2 cups Macroni 1 cup sliced veggies of choice (have used carrots, capsicum, olives, beans here) 2 grated tomatoes 5-6 garlic cloves finely chopped 1 onion finely chopped 100g paneer cut in small pieces Spices (salt and pepper to taste) 1 tbsp tomato puree (optional) 1 tsp herb mix Fresh corriander for garnish Oil and water for cooking Method 1. First boil the Macroni in water with little salt and oil and strain it and run cold water through it. Please ensure that it is slightly uncooked (Al Dante). 2. In a kadai, heat about 1 tbsp oil. When hot add garlic and saute it till it achieves a pink color. 3. Add onion and saute it, till it is cooked but remains crunchy. Also now add all veggies, one by one depending on their cooking time. Mix everything well and add salt and let the veggies cook a bit. 4. Now add grated tomatoes and tomato puree and cover the kadai with a lid for 2-3 minutes so that the tomatoes leave some oil. 5. Add paneer and mix it well. Also now add Macroni and while mixing paneer and Macroni with the sauce add little water too if you feel the sauce is getting dry. 5. Finally add pepper and mixed herbs to taste and garnish with fresh corriander. Serve hot with some garlic bread or just like that. This is a meal in itself and one can add many veggies like mushrooms and broccoli too. Also you can grate in some cheese for the kids. Please note that if you want to make this receipe for toddlers then add grated Vegetables and paneer. This way you can give lots of nutrition to your kids in one go and that too in a tasty way. Also keep the spice Content low.
