My kiddo lives idlis. So I load them with no. Of veggies to make him learn to eat vegetables. These are made of semolina & curd rather than the dal rice, so are instant, light and easy to digest.
I am glad I could finally make him love eating vegetables.
Recipe :
( for around 12 medium sized idlis)
Take one small bowl of suji and one cup of curd and Add half sache of eno and mix well. Keep it aside for 10 mts. ( if the curd is little old, you may skip eno).
Add finely chopped small pieces of veggies ( I used : onions, tomatoes, capsicum, carrots, peas, potatoes, corns) in the batter. Add a pinch of salt, black pepper and half spoon of vegetable oil in the batter.Now mix everything beating it well.
Method -
You may use the microwave or cooker method as per your choice and comfort.
For microwave stand: grease the moulds with oil and put batter. Microwave at max temp for 7-10 it's. Leave the stand for 2-3 mts inside the microwave once it stops.
Now enjoy the idlis. I am sure your toddler will love them
