Sabudana kheer
This is one of my favourite fast recipes!!..This is light and yummy
Ingredients (will make 4 servings)
1/4 cup sabudana

1/2 litre milk

6 table spoon sugar (can be reduced and adjusted as per taste)

Nuts as per choice

1/2 tea spoon elaichi powder

Kesar strands (optional)

Rose essence 5-6/drops

Method
1. Take sabudana in a sieve (channi) and wash it well 2 times. Then soak in little water for 3-4 hours. If you don't have time then after washing sabudana, add water to just cover it and microwave it for 2 minutes thrice giving little breaks. If you have time you can just wash sabudana at night say 9o' clock and keep it overnight by again washing it before sleeping. The third way will keep each sabudana grain separated.
2. Once you have soaked sabudana ready, take milk in a pan, bring to boil and then let it reduce on simmer for just 1o minutes.
3. Now add the soaked sabudana and nuts and let it cook on simmer till you will see it rising above. This is a sign that it is cooked.
4. Now add sugar, elaichi powder and kesar. Mix well and switch off the gas.
5. When mixture comes at room temperature, add rose essence.
Serve chilled. You wont believe that vrat ka khana can be this tasty.
