When the devil watches you cook! 
Confidence is something that I have NEVER lacked.  I have always believed that that if I set my mind to it,  there is NOTHING,  I can't do. 

Cooking,  though,  is a different ball game,  altogether.  Let's face it,  I am NO Gordon Ramsey (British equivalent of Sanjeev Kapoor/any other greater Indian chefs that I don't know of) My only claim to cooking fame is my pasta in white sauce.  (Not the healthiest of foods but yummy quotient: HIGH)

I have always been the gourmand and not the chef! All I do is try. 

You know how they say, "to good well, you need to cook with love. Taste follows love in a recipe. "

Well!  going by that,  I have cooked a LOT of disasters with a LOT of love. 

But do I give up?  NO! 

The basic routine food like dal sabji,  I can cook, no problem.  It is the delicacies,  the kids' favorites like sambhar, rajma and the likes that I struggle with.  Like every mommy,  I too dream of cooking healthy,  hearty and tasty delights for my little froggie and I have exactly 11 months to up my ante. This is when my little monster will start some solid solids. 

I do know the recipes to perfection.  Implementing them to derive the required taste,  is the real challenge.  And believe you me,  the ONLY time my dishes come out real tasty is when I cook with a "don't care" attitude.  So,  what I am REALLY looking for is,  "Don't care what and how I cook for my kid" recipe. 

Can anyone help me with THAT? 

Apparently in my case that is when I cook my finger licking best.  Sigh Sigh
I know every kid loves his/her mother but an absolute way to make your kid dote on you is SUGAR! (don't make it a habit unless you want  a hyperactive kid who doesn't really appreciate the cake as long as they get the sugar kick)  Cakes are something, I can't resist.  So,  every now and then, on days when I feel ambitious, I try and bake one.  These haven't been absolute tsunamis but they haven't been little drops of heaven either. And hey!  just average cakes wouldn't bring you the extra cuddles.  Boohoo!  I have tried the basic beat beat beat alot but the cake had flavour but not enough spongy.  I tried the micro recipe,  the cake was spongy but not enough flavour.  On a spurt of extra swank in my attitude, I tried the ever-so-loved , the king of all cakes (for me)  the apple cinnamon cake. And I tried it a multiple times and it has gone from tasty but too sweet to not tasty too bitter (thanks to extra cinnamon)  to perfect sugar,  perfect cinnamon but too oily. Such have been my apple cinnamon woes!  I, then decided to put this on hold and try the simplest,  can't get it wrong,  recipe.  Chocolate cake,  no eggs, no butter recipe.  All you have to do is follow the YouTube tutorial to the T and wait for it

My son will dote on me , AFTER all,  the mother who bakes a decent chocolate cake.  Phew!

My khichadi is always burnt.&#160; Other things I cook okay.&#160; According to my daughter and her cousin I am the best cook in our family&#160; &#128522;. There was a time I didn't cook.&nbsp; I learned to for my Princess.
