Smoked Veggies Grilled Sandwich

I thought of making my regular humble grilled sandwich a bit differently today. We all usually make grilled sandwiches with different stuffings and veggies are my favourite, so I made a grilled sandwich with grilled smoky vegetables. It tastes awesome and is very easy to make!

Ingredients:

  • 2 slices of sandwich bread (preferably thick ones with the crust)
  • Sliced vegetables (onion, carrot, capsicum, tomato, cucumber, zucchini,  mushrooms,  cabbage etc.)
  • 1 tsp oil
  • 1 tsp butter
  • Salt to taste
  • 1 tsp chilli flakes
  • 1 tsp oregano
  • 1 tsp pepper powder
  • Cheese (optional)

Method:

  • In a bowl add all the sliced vegetables and sprinkle half of the salt, pepper, chilli flakes and oregano and mix well. Also add 1/2 teaspoon oil and mix.
  • Heat a grill pan. A normal pan with lid will also do. When quite hot, add all these marinated vegetables to it. Toss a bit and let them char a little. Then quickly sprinkle rest of salt, pepper, chilli flakes and oregano and add leftover oil and cover it and turn off the gas flame. This will give a smoky flavour.
  • Now apply butter as per your liking on the bread. Arrange the grilled veggies and top with  another slice. You may use a sandwich maker to grill the sandwich or even use the same pan in which the vegetables were prepared.
  • I used oil for grilling the vegetables. You may also use butter if making for kids.
    Enjoy with a dip of your choice!
