A traditional vinaigrette is a cold sauce made from a base of oil, onion, and vinegar. The alternatives suggested draw their natural and healthy acidity from lemon juice. Lemons provide vitamins, stimulate the appetite, helps in the absorption of iron, and ease digestion. The dressing is perfect for salads, vegetables, and legumes.

 

Ingredients:

 

  • 1/2 small onion
  • 1 clove garlic
  • 1 branch of peppermint
  • 2 tablespoons of lemon juice
  • 110ml (= 8 tablespoons) olive oil
  • Sea salt as per taste

 

Method:

 

Beat all the ingredients (once washed and chopped)  with a hand-held blender until the mixture is fine and well mixed.
